Recipe: Fresh tomato and sweet corn salad

There are gazillions of Salad recipes that we can explore! But one thing that caught our heart was this refreshing salad made from soft and crunchy sweet corn kernels tossed with fresh tomatoes and onions. The salad is then mixed with zesty Indian spices to create a ‘oomph’ of flavour.Â
In other words we can also call this a ‘Corn Salsa’ omitting the Indian Spices and just flavouring it with freshly squeezed lemon juice and salt. It will make a perfect topping for your crispy nachos with a good sour cream dip.Â
Ingredients
- 1 cup Sweet Corn
- 1 Red Onion (finely chopped )
- 1 Fresh Tomatoes (medium sized, finely chopped )
- 1 Green Chillies (finely chopped )
- 1 tsp Red Chilli / Cayenne Powder
- 1/2 tsp Chaat Masala
- 4 sprig Coriander / Cilantro (finely chopped )
- 1/2 Lemon (juiced )
- Salt (for taste)
Equipment used
- 1 Saucepan
- 1 Lemon squeezer
- 1 Mixing bowl
Instructions
- Heat a sauce pan with 11/2 cups of water to boil, once the water starts to boil, add in the sweet corn
- Boil the sweet corn for maximum of 2 minutes and strain all the water out
- Once the sweet corn is cooled down, take a mixing bowl and add in chopped onions, tomatoes, coriander leaves, all the spice mentioned above
- Using a lemon squeezer, squeeze out the lemon juice into the bowl. Add salt and give it a mix
- Once you have mixed well, give one last taste to see if you need any more seasoning.
- You can relish the salad simply as a quick snack in itself or have it with a bowl of nachos and dips!

COOKING TIPS
Make sure you do not over boil the sweet corn in the hot water.
Keep an eye on it and remove immediately.
You can also steam the sweet corn kernels using a steamer for at least 2 minutes.
Cool sweet corn completely before mixing it with other ingredients. It is best made cold.Â
SERVING TIPS
Serve as a salad bowl or with an assortment of fried papad as sides.
Experiment with ingredients of your own choice by adding chopped cucumber and fresh mint leaves!Â
STORING TIPS
You can store it in an airtight container for a day in the refrigerator.Â
If you are planning on keeping it for more than a day, make sure you do not add salt to the salad as it will leave out water and just when you serve sprinkle with salt and serve.
